Creamy Cauliflower Rice Broccoli Salad

Serves: 2

Ingredients

Dressing:

  • 1 avocado, pitted and chopped
  • 1 tbsp olive oil
  • ½ cup water
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp black pepper

Salad:

  • 1 cauliflower head, chopped
  • 1 head broccoli, chopped
  • 1 cup red cabbage, chopped
  • ¼ cup almonds, chopped
  • ¼ cup dried cranberries
  • Cilantro for garnish

Directions:

  1. Add cauliflower to food processor and pulse until the cauliflower resembles rice (7-8 pulses)
  2. In a small blender, add all dressing ingredients and set aside
  3. In a large bowl, add broccoli, cauliflower rice, red cabbage and mix in dressing. Sprinkle with almonds and dried cranberries. Garnish with cilantro
